yes this would work.
Make sure that the steamer you are using has small enough holes so the couscous doesn’t fall through.
You need to buy raw couscous if you want to cook it the old fashioned way. Do not use the instant one out of the box.
Butter up your hands and rub the raw couscous before you steam it the first time.
Put it in the steamer and let it slowly steam for about 15 minutes.
Remove the couscous from the pot onto a large clean dry surface and butter up your hands again. Run your hands through the couscous and keep separating little formed balls.
Perfect couscous should look like fine sand, there should be no lumps whatsoever.
Repeat this process each time until you feel the couscous is nice and tender. Make sure you keep your eye on it after 3-4 steaming session so it doesn’t get gooey.
Make sure to break up all the formed balls that happen due to couscous doughy nature once its wet.
This is why you need to have a lot of soft butter to coat your hands with each time you are handling the couscous.
The balls will be less likely to form if there is enough grease.
If you go to any Indian store, ask for Ghee. Its clarified butter that works just as well as Smen. Smen is a really strong concetrated butter that has a very strong pungent flavor. I have a huge tub of it and I only use less then 1/4 of a small spoon each time.
Ghee however is very mild and it has a really great almost cheezy smell and flavor to it.
Don’t forget to salt the couscous as well.
If you want to do the instant couscous because its easier, you can. Its not the same, but, beats being in the kitchen too long.
