Chinese Miao food: spicy, colorful, delicious, and more!
The Miao are an ethnic minority, and admiring the glistening silver jewelry the women wear from head to toe, you may think they are rich. But the Miao lead a hard and simple life in remote mountainous areas of southern and southwestern China. Even during holidays and weddings, food displayed on a table doesn't look very sumptuous. But in the Miao area there is some special and delicious food unlike that in any other places of China.
Colorful glutinous rice
Glutinous rice is the staple food of Miao culture. During holidays they prepare a unique colorful rice for their guests. The rice has five distinct colors: black, white, yellow, blue, and red. The colors are made of many different plants, like mulberries. The colors are amazing and the rice is quite sweet.
For single women, the delicious, colorful glutinous rice is a gift to their partners. They may put some special things in the rice basket to imply where their relationship is going. If the man finds a bamboo hook inside, then he knows he will have to buy an umbrella for the girl as a present. A tree fork implies they are finished. A toon sprout means they can marry soon. On their wedding day, the couple will eat glutinous rice paste with phoenix, dragon, and baby patterns on it.
Oil-tea
A very common Miao beverage is “oil-tea.”It is a everyday drink for some people. The tea leaves are mixed together with oil, salt, and ginger, then cooked in a wok. Then put into some water, and boil them together. The tea leaves are smashed into fine bits using a wooden mallet and everything is then boiled for a few more minutes. Then the tea is sieved and blended with beans, peanuts, or sticky rice, and then some peppers, garlic, and spring onions can be added.
Finally a cup of rich and deep tea is ready.
A chopstick is always served with oil-tea. If you don't want tea anymore, then just lay the chopstick onto your bowl. Otherwise, you will be served tea non-stop!
Sour soup
A special sour soup is served all year round. The soup is made of different steamed vegetables and fermented rice. The Miao would use this sour soup to cook meat, chicken, or fish, so their dishes have a unique sour flavor.
Spicy flavoring
In ancient times, it was very difficult for the Miao to get salt, so they used hot peppers to add flavor to their dishes and developed a taste for very spicy food. Today the Miao use the minced and fried chili peppers as important flavoring for their dishes.
Chili peppers can be prepared in lots of ways. After baked or fried, they can be blended together with ginger, garlic, or wine to have distinct flavor. You can store the flavoring in a jar for quite a long time.
Chicken and duck
The Miao like chicken and duck meat, and especially chicken or duck’s heart. The innards are always saved for the guests and elder to express respect.
Wine
Wine has a long history among the Miao. Nearly each Miao family can make wine at home.
A special fruit and sticky rice is used to make a wine which tastes sweet, and aids digestion. If you visit a Miao village, the local people will entertain you with a whole set of wine service. As many as twelve places from the road to their village gate are designated as the sites for this service. You will be a great man if you can drink up all 12 bowls of wine! But no need to be upset if you can't. Use your lips to softly touch the bowl, and with a polite "Dou She Mo," which means "Thank you" in the Miao!” then you can go.
Visit the Miao villages during their holidays, and you can enjoy their exciting singing and dancing performances, along with their fascinating embroidery and silver ornaments like the unique silver earrings. Of course, plenty of wine is served too!
