What is the difference between pump and steam espresso makers?
Professional and better domestic machines use a pump to get up to pressure which enables them to deliver water at 9 bar and about 92°C, which has been found to be the ideal temperature and pressure for coffee extraction.
Steam espresso machines are generally cheap and rely on heating up water to produce steam to get up to pressure. Because of this they are unable to reach a pressure higher than about 1.5 bar. It also means that the temperature is higher than desirable and results in burnt coffee.
