What is the difference between and a CUPCAKE and a MUFFIN?
I was asked this question last weekend by a person from Japan. I was serving Sam’s club jumbo muffins as one of the desserts. I gave a brief answer to them but now I am not sure my answer was correct. Please Help!
A cupcake is – get ready – a cake baked in a cup.
A muffin is a quickbread. This is where it gets blurry, since there are quickbreads that look and taste an awful lot like cake. Many quickbreads have a cakey texture since they use baking powder or soda (rather than yeast) and call for a higher percentage of wet ingredients.
All this might sound like splitting hairs, but there’s actually a difference in the recipes according to many people. There aren’t any hard and fast rules, but one of the keys is the fat. Using this definition, a muffin recipe is going to average about 2 Tbsp. of fat (like butter or shortening) per cup of flour. There’s probably also going to be about 2 Tbsp., give or take, of sugar, and about 1 egg per two cups of flour. If you see a recipe where the fat, sugar, and eggs are present in higher proportions, then you’re probably making cupcakes rather than muffins. Here’s a link to a website that talks about this.
Ultimately, though, what you end up with is two very broad definitions with some a whole lot of overlap. To some people, a muffin is a quickbread with a fairly standard recipe structure. To others, it’s a cupcake without frosting. (My grocery store sells chocolate-chocolate-chip “muffins.” Muffins, my big toe – they’re like eating a stick of butter with chocolate chips in it.) Some people define a cupcake as a cup-shaped cake-like food, while others are going to persist that a cupcake isn’t a cupcake without enough fat to stop a heart and an inch-thick layer of frosting. A lot of people seem to have taken the time to throw their definitions into the running, but it doesn’t seem like any of them actually sat down afterwards to reach a universal consensus. I guess I don’t mind having fuzzy boundaries. To me, If it’s chocolate or vanilla or some other flavor of bona fide cake, it’s a cupcake. If it’s somewhat less sweet, contains fruit or nuts, or has any savory ingredients, it’s a muffin. (You’d never call a corn muffin a “corn cupcake,” would you?) Cupcakes are never healthy; with muffins, though, at least the potential is there.
Which brings me to the real reason I’m OK with such broad definitions: they give me an excuse to eat cake for breakfast.
