Have any great FRESH kielbasa meal recipes?
[ "Kielbasa" is the Polish word for all sausages of any type from any place, whether fresh (raw) or smoked (cooked). "Polska Kielbasa" or "Polish Sausage" is specifically the smoked variety. ]
I’m looking for ways to prepare fresh kielbasa. Not the “fully cooked” “smoked” sausage, and certainly not that factory made stuff in plastic vacuum wrap, but fresh, raw, pork kielbasa from a good Polish butcher counter.
My usual way is to boil it for about an hour, and serve it along with a baked Vlasic Polish style sauerkraut to which I have added sauteed onion and bacon plus brown sugar and apples. Very tasty, but I’ve been eating it for nearly 50 years!
Your kielbasa makes a great meat base for any number of dishes. You could combine it with potatoes, onions and chicken stock to make a hearty soup. Taken out of its casing and combined with ground beef, rice, spices and tomato sauce, it could be used to make stuffed peppers, or combined with chopped cabbage, it could be made into lazy man’s cabbage roll casserole. With a few seafood products ( shrimp, fish chunks, crab meat, scallops etc.) and a tomato sauce again with more spices it could be made into jambalaya and served over rice or noodles, with a side of crusty bread it would be yummy! You could use it for meatballs in spaghetti, as a base meat for meatloaf. The possibilities are only as limited as your imagination..hope I have helped with some ideas! My favourite kielbasa treat with the cured meat is a thin slice with some sharp cheddar cheese, a sweet pickle slice on a cracker. I have this for lunch when bored with sandwiches
