Kasumi Titanium
Has anyone had any experience with Kasumi Titanium Knives or any kind of Titanium knives?
If so what are they like to work with? Are they just as sharp as the Kasumi steel knives? Are they easy to sharpen? Are they strong?
Anyone who’s tried them is welcome to answer but if you’re a professional chef then all the better. Thanks.
Don’t let the Kasumi promos lead you down the wrong path. Their “Titanuim” knives are made from high carbon molybdenum vanaduim steel which is treated to a hardness of RC59 then coated with a titanuim coating. The higher the RC the harder it is to sharpen. What happens to the coating when you sharpen the edge? A high quality diving/military knife has a hardness of RC 42-49. Kusami also boasts of a “gold” coated knife that out performs all others at a outstanding price. We all know that gold is a soft metal. How long can that last?
