sushi knife (brands)?
im looking for a sushi knife, but not sure what are “good brands”
are any of these good?

I am a former chef and worked in Japan and bought my Global ones there, I have never seen the others, I like the one there with the bamboo handle, but they were 3 X the price when I bought mine back in the 1980′s while working there for a Canadian hotel chain, my advice is go to the place that sells them, ask to see them, pick them up and feel how there weigh and fit your hand if they are the right ones for you, price should not be an object but if there is a comparison and they all feel right, then choose the one you feel is right for you, the Global clean up the best as they are all metal.
