Recipe for Chicken Cooked in Traditional Cider
Chicken is quite rightly one of the most popular meats in the world.
It is very lean, is protein rich, extremely versatile and plays a major part in a lot of diet recipes. If you can buy an free range chicken, even better, as it will be less likely to be contaminated with additives and hormones. It’s also a great idea from the animal welfare point of view, as a lot of the supermarket chickens are bred in conditions that are absolutely terrible.
If you are not on a diet, there is no need to fret, chicken is not just used in low fat recipes. Nevertheless, most recipes that include chicken will be, broadly speaking, healthier than the same recipes prepared using alternative meats, like beef or pork.
Here is a simple recipe that will most certainly satisfy your dinner guests.
To prepare this recipe, you will need:
One organic chicken (approximately 3.5 lb)
Two cupful of traditional cider
Six apples (pared and quartered)
salt (as required)
pepper (as required)
1 tsp. cornstarch
1/2 C. whipping cream (light)
1 tablespoonful of fresh lemon juice
1/3 cupful of butter
2 tablespoonfuls of olive oil
1/4 teaspoon ground cinnamon (not obligatory)
4 spring onions, (chopped well)
Two cloves
A quarter teaspoon ginger
1 sprig of parsley, (finely chopped, for use as a garnish)
Half teaspoonful thyme
Two teaspoons of brown sugar
Preparation:
Wash the Chicken and dry it well.
Combine some salt and pepper and rub it into the organic chicken (exterior and interior)
Take the quartered apples and drizzzle the apple juice over them.
Melt half the butter in a large frying pan or skillet and mix in the olive oil.
Put half of the apple pieces into the pan and fry slowly for five min. (until they have browned a little)
Add the ginger and give it a few stirs, heating it a little longer to allow the ginger to develop it’s flavour.
Stuff the apple mixture into the chicken and close the cavity by string or by ‘pinning’ it with a metal or wooden skewer.
Melt the remaining butter into the pan and then put the organic chicken into the frying pan and quickly brown the outside of the chicken, browning it all over.
Transfer the chicken to a big oven ready casserole dish with a tight fitting lid.
Take the rest of the apple, the green onions, ground cinnamon, dried thyme, sugar and cloves and put them in the skillet.
Cook for a couple of minutes and pour in the apple cyder and bring to the boil.
Once the cyder is boiling, add it the oven dish with the chicken and put the lid on the pot.
Put the pot in the oven and cook for approx 3/4 hour at 200 Centigrade
Once the chicken is cooked, transfer it to a warmed plate to keep warm whilst the gracy/sauce is prepared.
Skim and remove any fat from the pot and then boil the juices down until there is approximately one cup remaining.
Pour in the whipping cream and cornstarch, mixing well until it is nice and thick.
Season to taste, and pour the gravy over the cooked chicken
Sprinkle the parsley garnish over and serve.
If you want to keep the whole meal healthy, you could add side servings of cauliflower or spring greens and carrots.
