The Never Ending World Of Frying Techniques
You hear a lot about frying these days; mainly that it is not a healthy way to cook. Actually, a lot depends on your technique. Of course, if you fry at a low temperature, your food may soak up more oil and become greasy and saturated. No one could say that results in a tasty meal. Bone up on your techniques and you can turn out healthy fried foods.
The Asian stir-fry is known to be very healthy. They use a healthy oil in a small quantity. It is heated over high heat in a steel wok. The food is cut in bite-sized pieces so it cooks quickly. In just a few minutes, you have perfectly cooked food that is absolutely delicious. You can use any type of meat in a stir-fry from seafood to chicken to beef. Keep your wok seasoned properly and your food will not stick. Do not waste your time with nonstick woks. You cannot get the desired high temperatures with them and nonstick is controversial anyway.
Sautéing is another method of frying. This uses a traditional skillet and a little bit of oil or butter. Vegetables or meat are cut up and fried quickly. The food is moved around the pan until it is browned, yet still retains its texture, flavor, and moisture. A typical sauté pan has a broad flat bottom with shallow sides.
Pan-frying is the method used to cook larger pieces of meat like fish, beef, chicken, or pork. It uses only a little fat to lubricate the pan so the food does not stick. The food must be turned a few times to make sure all sides are browned and cooked through. Two meats that are often pan-fried are bacon and sausage.
One method you could use for your favorite fried chicken recipe is shallow frying. This method uses a lot more oil. You want to fill the pan with enough oil to reach halfway up the sides of the food you are frying. It is often used to cook chicken, fish, or pork chops. The food must be turned at least once so both sides are cooked adequately.
You could use this method when you make chicken fried steak. The beef is breaded, so using shallow frying creates a nice crisp coating around the meat. It is traditionally served with pan gravy made with milk and drippings from cooking.
Oven frying is another technique you could use that emulates frying without the oils. It is perfect for an oven fried chicken recipe or maybe some fish. The meat will not soak up extra calories since it is not sitting in oil. The outside gets nice and crisp, just like traditional frying. Give it a try if you are trying to lower your cholesterol or are watching your weight.
Deep-frying has earned a tarnished reputation. While everyone loves deep fried foods, they are generally thought of as unhealthy. Often, all it takes is using the right oil at the right temperature to get food that does not soak up a lot of calories. Heat the oil up first, then cook in batches so the temperature does not drop too much.
