A seafood supplier should give you both dark meat, which is earthy and nice for making fishcakes or soup recipes, and light meat, which is perfect for a mouthwatering crab meat salad.

 

If there is a sign saying the crab was alive a couple of hours ago, you should be able to trust it, if you have chosen a good seafood supplier. Crab, which is still warm from the boiler, has the most amazing smell and will make your mouth water in anticipation of eating it.
