* 1 onion
* 1 tablespoon olive oil
* four cups chopped carrots
* 4 cups water
* 1-2 bouillon cubes
* 3 tablespoons recent tarragon, chopped
1. In large saucepan with lid, sauté onion in olive oil on medium warmth till translucent (approx. three minutes).
2. While onion is sautéing, coarsely chop carrots. Add to onion. Proceed sautéing another 5 minutes, stirring frequently.
3. Add water, bouillon cubes. Cover, reduce warmth and simmer 20 minutes or till carrots are tender.
4. Mix directly in pot with hand blender or in traditional blender. Alter seasonings. Stir in tarragon. Serve.
